Stretching a Dollar Till It Breaks - Food Edition

With money being tight, I think I've gotten pretty creative with knocking our grocery bill down. I've checked out all the "eat-on-x-dollars-a-day" blogs, shop with a list, make menus, etc. I've even thought about trying to do something crazy, like try a $50/week grocery budget (for all of us but Mr. Autism, who has a different diet).

Today, though, was our cheapest day yet, I think. I tallied it up mentally at dinner and had to laugh. I know it wasn't our healthiest day, but it was cheap, but we usually do eat better than this, I swear.

For 3 people (2 adults, 1 kid)

Breakfast:
Total estimated cost: $2.63
Meal: Eggs scrambled with cheese, biscuits

Breakdown:
6 eggs, scrambled (1/3 of carton of 18)- $0.63
Biscuits (1 package out of a 4 pack) - $0.50
Portions of butter, cheddar cheese, milk, coffee, sugar - $1.50

Lunch:
Total estimated cost: $3.38
Meal: Macaroni and cheese with hot dogs (I know.. not healthy at all)

Breakdown:
2 packages store brand macaroni and cheese - $1.38
3 hot dogs (1/2 package) - $1.00
Portions of butter, milk, soda (me only) - $1.00

Dinner:
Total estimated cost: $3.33
Meal: Bean burritos!

Breakdown:
1/2 package of tortillas - $1.00
1/6 package of pinto beans - $0.33
Portions of cheddar cheese, milk, sour cream, spices, salsa - $2.00

Today's Estimated Cost of Eating: $9.34
Estimated Cost per Person: $3.11

Not too shabby! Tomorrow- lots of vegetables with dinner. I promise.
